Fall is here which means I am back in the kitchen every chance I get creating fun and tasty fall treats! I love both pumpkin and apple flavors equally. Our family loves breakfast so the other morning while trying to figure out what to cook everyone, I got to thinking and decided to create these delicious pumpkin waffles with our favorite Pamela’s Gluten-free Pancake & Baking Mix. I was so proud of myself when I got this recipe perfect the first try! These pumpkin waffles are the most delicious fall breakfast ever. Not too sweet, with just the right amount of pumpkin flavor. I may just be cooking these every weekend until December.

Gluten-free Pumpkin Waffles
Yields 6 mini waffles or 2-3 full sized waffles
Prep: 5 minutes
Cook time: 10 minutes
Total time: 15 minutes
What you need:
•1 and 1/2 cup of Pamela’s Pancake & Baking Mix
•3/4 cup of pumpkin purée
•Ground cinnamon
•1/2 cup of water
•2 tbsp of olive oil
•Waffle maker (I use a mini one, but you can use a full-size waffle maker as well)

How to make:
1. In a large bowl, mix 1 and 1/2 cup of Pamela’s Pancake & Baking mix, 2 tbsp of olive oil, 1/2 cup of water, and 3/4 cup of pumpkin purée. Mix thoroughly.
2. Prepare and heat your waffle maker. Use about 1/4 cup of prepared waffle mix and cook until done.
3. Top with syrup, ground cinnamon, crushed walnuts, or your favorite waffle toppings. Enjoy!
