Easy Egg Salad

As the warm weather begins, I find myself loving meals that are cooler but still fun. No matter if we are at home or out for a picnic in the woods, the kids love hard boiled eggs! Yesterday for lunch we created a delicious egg salad on whole wheat toast for an eggceptional lunch! I love how easy Great Day Farms are (I am terrible at cooking hard boiled eggs and even worse at pealing!) and they conveniently come in a pack of 2 or 6!

All you need to make this delicious egg salad toast:

8 hard boiled eggs (I use Great Day Farms)

1/3 cup mayonnaise

1 1/2 tsp. yellow mustard

1 finely diced rib celery

2 tbsp. finely chopped chives

2 tbsp. finely chopped dill

Whole wheat toast

Lettuce

How to:

1. Cut Great Day Farms hard boiled eggs in half. Remove egg yolk and dice egg whites.

2. Mash egg yolk with mayonnaise and mustard. Set aside a small about of dill to garnish.

3. Add remaining ingredients and stir well.

4. Toast the whole wheat toast. Put lettuce on top and add a generous spoonful of egg salad on top. Garnish with remaining finely chopped dill and salt and pepper if desired.

This is my all time favorite egg salad recipe for how easy it is to make. My kids love it and approved by picky adults as well. Hope you enjoy!
