Lemon Beetroot Muffins

This past weekend, I whipped up these delicious lemon beet muffins. These light and fluffy muffins are the perfect make-ahead breakfast, on-the-go snack, and fun, healthy treat. I used Total Beets Original Powder by Force Factor which provides the perfect natural kick of heart-healthy energy without caffeine or other stimulants. With a delicious pomegranate berry flavor and 7 beets per serving, this beetroot powder was the perfect addition to these yummy muffins.

Lemon Beetroot Muffins

Total Time: 25 minutes
Prep Time: 10 minutes
Cook Time: 15 minutes

Yields: about 12 muffins

Ingredients:
•2 cups of all-purpose flour
•4 tbsp Total Beets Original Powder
•1 tsp baking soda
•1/2 tsp baking powder
•1/2 tsp salt
•1/2 cup melted coconut oil
•1/2 cup monk fruit
•2 large eggs
•2/3 cup Greek yogurt
•2 tsp vanilla extract
•1/4 cup honey
•5 tbsp lemon juice

Instructions:
Step 1: Preheat oven at 350 degrees. Lightly grease a muffin tin and set to side.


Step 2: Combine dry ingredients in large mixing bowl. Stir well. Add eggs, melted coconut oil, Greek yogurt, honey, vanilla extract, and lemon juice. Beat well until mix is formed.


Step 3: Use a tablespoon to scoop batter into a lightly greased muffin tin.


Step 4: Bake for 15-18 minutes or until toothpick comes out clean.


Step 5: Let muffins cool for 5-10 minutes before taking them out of muffin tin.
