No-bake lemon cheesecake

There is no better summer evening than spent with family, good conversations, and of course, a delicious dessert. Cue my favorite lemon cheesecake! This lemon cheesecake filling is only 3 ingredients and so easy to make. So easy that even the kids know how to make it. I love that it can be made and ready for a last minute get together or the perfect potluck dessert. I love cheesecake, but hate how complicated some cheesecakes are to make so this cheesecake has become my go-to summer dessert!

Ingredients:

•16oz softened cream cheese

•14oz sweetened condensed milk

•1/2 cup lemon juice

•1 pie crust (we used shortbread but graham cracker is also delicious too!)

Optional: Lemon zest from 1 lemon

How to make:

1: In a mixing bowl, use a hand held mixer to mix cream cheese, sweetened condensed milk, and lemon juice until silky smooth.

2: Fill pie crust with cheesecake mix. Sprinkle lemon zest on top and refrigerate for 2-4 hours. Serve chilled.
